The Cappadocia University Department of Gastronomy and Culinary Arts has a strong identity not only in practical education but also in scientific research. With a research approach that extends from the local to the global, multidisciplinary studies are conducted at the intersection of gastronomy, food, culture, and tourism.
As an outcome of these efforts, our department publishes a peer-reviewed academic journal titled “Cappadocia Journal of Gastronomy, Food, and Tourism Studies”. This journal hosts original articles that deepen the theoretical foundations of gastronomy science, create space for innovative projects, and scientifically document the cultural richness unique to the Cappadocia region.
